2 Ingredient Biscuits

2 Ingredient Biscuits

I am once again amazed at how simple and delicious a 2 ingredient recipe can be! I recently tried a 2 Ingredient Pizza Dough and was very impressed with the delicious results. So when I came across another similar recipe for biscuits, it was a no-brainer that I would try this also! These biscuits were so light and fluffy with just a hint of cherry sweetness. Perfect served warm with a little butter and a cup of coffee or tea.

2 Ingredient Pizza Dough

2 Ingredient Pizza Dough

Yes, I know it sounds crazy! That's why I had to try it! I saw this recipe floating around the internet recently and was intrigued. Then when I saw that one of my favorite food bloggers, The Slow Roasted Italian, tried this creation, I knew I had to also! I'm a full blooded Italian from New York, so I'm very picky about my pizza! New York has the best pizza in the world. My Grandma and Mom also made the best pizza in the world! So my pizza standards are extremely high!

Relished Recipe Kits at 50% Discount = Less than $5 Per Serving!

Look closely at these 3 yummy meals below! I am so excited to show my readers these recipe kits from Relished Foods.com (now know as Home Chef). These three meals were all included in one shipment that was sent right to my door in a cooler box. As you can see in my photos below, the kits included EVERY SINGLE ingredient needed to make each meal! You DO NOT need to shop for anything. You don't even need to measure any of the ingredients! They are all in pre-measured packages! All you need is salt, pepper and sometimes a few teaspoons of cooking oil, to create these fabulously delicious gourmet dishes. The taste is  truly '5 Star' restaurant quality because they supply fresh, top notch ingredients. And each recipe is created by Relished's own professionally trained restaurant Chef! They also send  glossy, easy to follow, full size, recipe cards with each meal kit.

You can tweak the recipes to suit your tastes. For instance, in the Salmon kit pictured above, I omitted the wasabi from my mashed potatoes but included it for my hubby! He raved about them! He actually raved about all 3 meals! And for the turkey burgers I decided to butter and toast the pretzel buns! Yes, PRETZEL BUNS!!! I love pretzel buns! My kids (20 & 23 years old) wanted a taste of the turkey burgers...they loved it also. And it was their first time eating turkey burgers. My kids are usually VERY picky eaters but they really wanted to taste everything! I think the gorgeous presentation piqued their interest. I can't even take credit for that because the recipe cards tell you how each dish should be assembled. I was able to easily prepare these 3 scrumptious meals without much thought. What I love about these kits besides the taste is not having to shop for each ingredient and not having to measure each ingredient! It's like have a sous chef with me in my kitchen. I just wish a clean-up person would have been included in these kits! Oh well, a girl can dream, can't she? You really feel like a highly skilled Chef while preparing these meals!

Red Beans and Rice

Red Beans and Rice

This is a very popular dish in Puerto Rico, Cuba and Jamaica. Smoked pork sautéed with onions, red bell peppers and garlic in a smoky seasoned broth with red beans. Served over cooked white rice. A hearty meal that I serve with some crusty bread to soak up the smoky broth...yum! I've been making this for many years. Always a favorite in my house!

Red Velvet Whoopie Pies and Cookbook Giveaway

Red Velvet Whoopie Pies and Cookbook Giveaway

Am I the only person on earth that never had a homemade whoopie pie? I've had the store bought kind with the chocolate coated cookie and marshmallow filling. Not a fan of those, so I never thought to try any others! Well, I'm now in love with the homemade variety! It is so much better than those marshmallow ones! It actually can't even compare!

Orzo Veggie Bake

Orzo Veggie Bake

I've been eating way too much meat lately, so I started hunting for recipes that only contained vegetables. Well, in this case, vegetables and pasta. I knew that I also wanted an easy recipe. This was all of those things! I love that I didn't need to pre-cook the pasta. I was able to make this main dish using only a large oven safe nonstick skillet and a baking sheet to roast the veggies.

Game Day Small Bites!

This year the big game is all about New York because it's taking place in the home stadium of 2 New York teams. I'm a New Yorker, so this is a huge deal! I don't know about you, but to me, the food served during these football games is just as important as the game! So today I'm sharing some tried and true small bite snack recipes that have a New York theme. The recipes also have a RITZ cracker theme because some of my fellow food blogger friends have created these recipes for RITZ. So these recipes have not only been tried by the creator but also by the people at Ritz! The Ritz company loved the recipes so much that they posted them on Allrecipes.com.

Kitchen-Aid Mixer Giveaway

I'm so happy to have joined forces with some blogging friends to be able to bring my readers a chance to win a KitchenAid mixer! I've been trying to win one of these mixers myself for the past few years! This lovely prize still eludes me! But that doesn't mean you can't win one!

Meatball Parmesan Dip

Meatball Parmesan Dip
This is the kind of dip that makes you want to just keeping eating it until it's all gone! But at parties that is frowned upon! And if you love meatball hero's but hate how messy they are to eat, you're going to love this dip! The only messy part is when you start licking the plate clean after it's all gone...another thing that is frowned upon at parties!

I served this with very thinly sliced, toasted, italian bread. Just lay out all the slices on a cookie sheet and put it under the broiler for about 3 minutes. Keep an eye on it because the bread browns quickly during the last 30 seconds. This recipe is perfect for 4 people but can easily be doubled.

New York City Style Game Day Food!

Photo taken from the top of the Empire State Building
Okay, let me start by saying I'm not a sports fan at all...gasp! But I do love going to those game day parties to munch on great finger foods! My hubby is a huge sports fan and he told me that this year the football game is all about New York! YAY...I'm a New Yorker, so now I have two things in common with 'The Big Day'...great food and my state! I currently live in the suburbs of NY, but it's only a one hour drive to the city. We go there often and love all the fun things to do in NYC. But the best part for me is the amazing food! One of my favorite New York City foods is a push-cart hot dog with onions from the hot dog vendors on the streets of Manhattan. You can find them on just about every corner! I decided to re-create those hot dog onions in my own kitchen! I tried many different ingredients until I was able to get the exact taste of the NYC hot dog onions that I crave and love!

Buffalo Style Oven Baked Ribs

Buffalo Style Oven Baked Ribs
I'm sure you've heard of Buffalo Chicken Wings. Well, I decided to use the same recipe to make my Buffalo Ribs! It worked perfectly! As a matter of fact, I like these Buffalo Ribs more than the chicken wing version!

I used country ribs, which are much more meaty, but you can use any cut of ribs you want. My recipe has a mild to medium amount of spiciness because my kids can't handle too much heat! But just add more hot pepper sauce to kick up the heat level. You can even dip these ribs in a creamy blue cheese dressing just like you do with the chicken wings. I dipped mine in creamy ranch dressing! And don't forget the celery sticks like I did! Give these Buffalo Ribs a try! I know I'll be making these many more times!

Mexican Meatloaf

Mexican Meatloaf

I love to take a classic meal and give it a slight twist! And since Mexican food is one of my favorites I decided to give plain old meatloaf some south of the border flair! I even topped it with a Mexican style gravy that I call Mexican Pink Sauce.

Prosciutto Pear Cups Appetizer

Prosciutto Pear Cups Appetizer

I went searching for a new appetizer to serve to my guests on New Year's Eve and I stumbled upon this little gem! I love that it's easy to make but looks very gourmet!  I also love that the prosciutto is cooked because I'm just not a fan of raw prosciutto! The flavors are perfect...slightly sweet with a touch of saltiness!

Champagne Cookies

Champagne Cookies
Got Champagne? Then make some cookies! That's what I did with some leftover pink champagne from New Years Eve! These cookies taste very similar to a sweet bread...not too sweet, nice and soft with slightly crunchy edges. And I love how pretty they look! These cookies taste great when eaten with a glass of champagne...or a cup of coffee! You can use any champagne, but I suggest using a not so dry one so that the cookies have some sweetness.

Cream Cheese Penguins

Cream Cheese Penguins

These are almost too cute too eat! But they're delicious so eat them! I've made these many times for parties and they are always a huge hit! I've even made them in a Super Bowl theme with a football shaped cheese ball surrounded by these penguins. Also a huge hit especially with the men! I found this recipe on Allrecipes.com.  I added the dry ranch dressing to the cream cheese for more flavor.

Cannoli Crumb Pie

Cannoli Crumb PieI can never say 'no' to a new way to make cannoli. I've made Cannoli Dip and a parfait called Cannoli Cream Dessert. So why not make a Cannoli Crumb Pie? This pie got rave reviews from a food friend of mine, so that was even more incentive for me to try it!

Classic Stuffing

Classic Stuffing

I know Thanksgiving has come and gone but stuffing is great any day of the year! I make this as a side dish to chicken, pork chops, ham and even fish! This can also be used as a layer for so many different kinds of savory casseroles! So don't just think of stuffing as a Thanksgiving food! Try it for your everyday meals also!

Super Easy Dessert Crepes

 Dessert Crepes

I've ordered dessert crepes many times in restaurants because it's a nice light dessert after a heavy meal. They can be filled with just about any fruit or even with melted chocolate! Or just roll them up unfilled and serve them with some fresh whipped cream.

Quick and Easy Gravy

Quick and Easy Gravy - Chicken, Vegetable or Beef

I use this recipe whenever I need a quick gravy. The gravy can be made with chicken or beef broth. This gravy can also be used to thicken soups. You can also make this into a vegetarian gravy by using vegetable broth instead of chicken or beef broth. And add any seasonings you want such as pepper, garlic powder, herbs, etc. It's better than canned gravy because you can customize it to suit your own taste!

Easy No-Cook Cranberry Relish - Only 3 Ingredients

Easy No-Cook Cranberry Relish - Only 3 Ingredients

I'm not much of a canned cranberry jelly person. For some reason it tastes like the 'can' to me! So whenever that condiment was passed around the table on Thanksgiving I would just keep passing it! And the way it jiggled just creeped me out! I know...I have serious cranberry jelly issues! But I know that it's a 'must' to serve on Thanksgiving! It's a tradition! If it wasn't on the table there would be an uproar, I'm sure!

Pumpkin Spice Latte

Pumpkin Spice Latte

You may remember from my post about how to make Pumpkin Puree from fresh pumpkins, that I had plenty of homemade pumpkin puree and would be making lots of pumpkin recipes!  So, I hope no one is tired of pumpkin recipes yet! I've heard that it's okay to share pumpkin recipes until Christmas day! Then after that everyone is done with pumpkin! Sort of like 'don't wear white after Labor Day'! Well, this is the first recipe I've tried so far and it was VERY good! So stay tuned for e few more pumpkin recipes on this blog in the coming weeks!

This Pumpkin Spice Latte is suppose to be a perfect copycat for the Starbuck's version. Since I've never had the Starbuck's version I can't compare! To me this tastes like drinking a pumpkin pie mixed in with your coffee...yum!

Pumpkin vs. Apple

This time of year I see TONS of recipes using apples and pumpkins! I love both, so it's a pleasure to see! I'm always amazed that so many cooks can come up with so many creative ways to use these items in recipes! Every year a new apple or pumpkin recipe emerges that I've never seen before and sweeps across the Internet becoming very popular, very quickly! But I'm old fashioned sometimes and I gravitate towards the basics when it comes to apples and pumpkins! I'll take a simple apple or pumpkin pie any day!

These next 2 recipes were just what I wanted...simple and basic but so very delicious! Both recipes are sweetened with SPLENDA® helping to keep them lower in calories.

Mini Apple Muffins
Mini Apple Muffins
Click **Here** for recipe
These are very tasty little muffins! I simplified the direction and also made some adjustments. I added a splash of vanilla extract and a pinch of ground cloves. I used SPLENDA® brown sugar blend instead of the plain granulated sweetener. And to make the directions easier I just mixed all the dry ingredients together in one bowl. Then in a separate bowl I mixed together all the wet ingredients. Then I added the wet to the dry and mixed until well combined. I used mini cupcake liners and scooped the batter to the top of each with a melon baller. Then baked as stated. These had a nice fresh apple taste but I would decrease the amount of lemon zest next time to half. And eat these after they've cooled completely so that all the flavors have a chance to meld together.

These mini muffins were perfect paired with a nice cup of this Gingerbread Coffee sweetened with SPLENDA®!

Harvest Pumpkin Oatmeal Raisin Cookies
Harvest Pumpkin Oatmeal Raisin Cookies
Click **Here** for Recipe
I love that these cookies are so light and soft. And I love the bright pumpkin color and flavor! I made them as written except I didn't use the walnuts or raisins because I wanted the pumpkin to shine through and it did! I also decreased the sugar slightly by only using 1/4 cup of the SPLENDA® white sugar blend. But I used the full amount of the SPLENDA® brown sugar blend. I added 1/2 tsp. allspice and I'm glad I did because it was perfect in this! A very good cookie that tastes great warm or cold.

I enjoyed these cookies with a cup of Whisky Tea sweetened with SPLENDA®

Creamy Chicken Corn Chowder

Creamy Chicken Corn Chowder

With the fall chill in the air this is the perfect time for a nice hearty bowl of this chowder! I loved the slight smokiness from the bacon along with the bite sized chunks of sautéed chicken. The creamy corn and cheddar cheese aren't too shabby either!

If you have some pumpkins lying around from leftover Halloween decorations, why not use them to make pumpkin puree? I'm not talking about the pumpkins that you carved faces into and lit with a candle! I mean whole, untampered, pumpkins.
