Am I the only person on earth that never had a homemade whoopie pie? I've had the store bought kind with the chocolate coated cookie and marshmallow filling. Not a fan of those, so I never thought to try any others! Well, I'm now in love with the homemade variety! It is so much better than those marshmallow ones! It actually can't even compare!


I found this recipe in a cookbook given to me by the Florida Department of Citrus. The recipe caught my eye because it's red velvet flavored and contains orange juice and orange zest...very unique and so very refreshing! I never thought to add orange juice to a red velvet recipe, but it truly works perfectly! And the sweet cream cheese filling also contains orange juice and orange zest! I almost ate the entire bowl of filling before I had a chance to add it to the cookies! Good thing I was able to lick the mixer beaters to keep me from devouring all of the filling! And yes, I turned off the mixer and unplugged it first! I'll never make that mistake twice!

I made these whoopie pies in honor of Valentine's Day! Get it...red velvet...red heart...sweets for my sweetie...and all that jazz! This dessert was so decadent, creamy and chocolaty with a hint of fresh orange goodness! You bite into the soft cookie and the creamy filling starts to ooze out and you have to lick your fingers and it's messy but you don't care because it's so heavenly! Before you know it your whoopie pie is gone and you're reaching for another one! And after the second one is gone you have to stop yourself! Yes, that's how the scene went with me! My hubby loved this also! And so did my kids!

Florida Orange Red Velvet Whoopie Pies

INGREDIENTS:
For the cookies...
1 cup Florida orange juice
1 tsp. Florida orange zest
1 box red velvet cake mix
1 large egg, beaten
1/2 cup butter, melted
1 tsp. pure vanilla extract
1/3 cup all purpose flour

For the filling...
1 tsp. Florida orange zest
1/2 cup heavy cream
8 oz. cream cheese
1/2 cup butter, room temp.
1 cup sugar
1 tsp. pure vanilla extract

DIRECTIONS:
For the cookies...
Place orange juice in a small saucepan and bring to a simmer.
 Let simmer until reduced in half. Then remove from heat and set aside.
Preheat oven to 350 degrees F.
Line a cookie sheet with parchment paper.
In a large bowl mix together the cake mix, reduced orange juice, orange zest, egg, butter, vanilla and flour. Mix until well combined, but do not over mix.
Make 24 (1 1/2" diameter) balls and place on cookie sheet, leaving space between each cookie for cookies to spread. Bake for 10-12 minutes.
Let cool completely before adding filling.

For the filling...
Whip heavy cream to stiff peaks. Set aside.
In a separate bowl combine remaining filling ingredients.
Beat with a mixer until smooth.
Then fold in the reserved whipped cream.
Refrigerate until chilled.

To assemble...
Spread 2-3 tablespoons of filling on flat side of 12 cooled cookies.
Top with remaining cookies, also flat side toward filling.
Dust with confectioners sugar and serve.

  2. I'm not a big fan of citrus and chocolate together BUT I love cooking with citrus. I've made a grapefruit salad dressing and a lemon butter dill sauce for fish just in the last week alone! The whoopie pies are gorgeous. Trust you and Tony and your family are well.
