Moroccan Chicken Stew

I've been wanting to try a Moroccan recipe since I first received a bottle of 'McCormick Moroccan Seasoning' from the McCormick Company. Well, I finally found this recipe...Moroccan Chicken on Weelicious.com. After reading some of the comments on that recipe I decided that I would add fresh garlic and a veggie. But then during the cooking process I realized I needed to tweak the technique also.

Breakfast Pizza

Breakfast PizzaWe love to have breakfast for dinner once a week, so this recipe came in very handy! This pizza is filled with so many fresh and flavorful ingredients like smoked chicken chipotle sausage, roma tomatoes, mozzarella, parmesan cheese, eggs and green onions! All baked on top of homemade bread! But you can use store bought bread. This is easy and very filling! The recipe is from the Johnsonville sausage company. It's called Morning Terrace Pizza and you can find it on Allrecipes.com.
 This is a very versatile recipe that can be made to suit your own tastes. You can use any flavor sausage and your favorite cheeses! That's what I did and it worked perfectly.
I used fresh roma tomatoes and green onions and mozzarella along with spicy and smoky chicken chipotle sausage. I used ciabatta bread for a nice crisp crunch! The eggs and cheese gave it creaminess and held it all together!
 
This was another one of my delicious brand ambassador assignments for Allrecipes.com. I'm really enjoying all the Johnsonville recipes. I was only asked to make 2 sausage recipes but these sausages are so good that I wanted to make more! I have one more recipe I want to make...I'll be doing that next week. It will be my own creation! I can't wait to try it!

You can tweak the recipes to suit your tastes. For instance, in the Salmon kit pictured above, I omitted the wasabi from my mashed potatoes but included it for my hubby! He raved about them! He actually raved about all 3 meals! And for the turkey burgers I decided to butter and toast the pretzel buns! Yes, PRETZEL BUNS!!! I love pretzel buns! My kids (20 & 23 years old) wanted a taste of the turkey burgers...they loved it also. And it was their first time eating turkey burgers. My kids are usually VERY picky eaters but they really wanted to taste everything! I think the gorgeous presentation piqued their interest. I can't even take credit for that because the recipe cards tell you how each dish should be assembled. I was able to easily prepare these 3 scrumptious meals without much thought. What I love about these kits besides the taste is not having to shop for each ingredient and not having to measure each ingredient! It's like have a sous chef with me in my kitchen. New York City Style Game Day Food!

Okay, let me start by saying I'm not a sports fan at all...gasp! But I do love going to those game day parties to munch on great finger foods! My hubby is a huge sports fan and he told me that this year the football game is all about New York! YAY...I'm a New Yorker, so now I have two things in common with 'The Big Day'...great food and my state! I currently live in the suburbs of NY, but it's only a one hour drive to the city. We go there often and love all the fun things to do in NYC. But the best part for me is the amazing food! One of my favorite New York City foods is a push-cart hot dog with onions from the hot dog vendors on the streets of Manhattan. You can find them on just about every corner! I decided to re-create those hot dog onions in my own kitchen! I tried many different ingredients until I was able to get the exact taste of the NYC hot dog onions that I crave and love!

Pumpkin vs. Apple

This time of year I see TONS of recipes using apples and pumpkins! I love both, so it's a pleasure to see! I'm always amazed that so many cooks can come up with so many creative ways to use these items in recipes! Every year a new apple or pumpkin recipe emerges that I've never seen before and sweeps across the Internet becoming very popular, very quickly! But I'm old fashioned sometimes and I gravitate towards the basics when it comes to apples and pumpkins! I'll take a simple apple or pumpkin pie any day!

These next 2 recipes were just what I wanted...simple and basic but so very delicious! Both recipes are sweetened with SPLENDA® helping to keep them lower in calories.

These are very tasty little muffins! I simplified the direction and also made some adjustments. I added a splash of vanilla extract and a pinch of ground cloves. I used SPLENDA® brown sugar blend instead of the plain granulated sweetener. And to make the directions easier I just mixed all the dry ingredients together in one bowl. Then in a separate bowl I mixed together all the wet ingredients. Then I added the wet to the dry and mixed until well combined. I used mini cupcake liners and scooped the batter to the top of each with a melon baller. Then baked as stated. These had a nice fresh apple taste but I would decrease the amount of lemon zest next time to half. And eat these after they've cooled completely so that all the flavors have a chance to meld together.

These mini muffins were perfect paired with a nice cup of this Gingerbread Coffee sweetened with SPLENDA®!

 I love that these cookies are so light and soft. And I love the bright pumpkin color and flavor! I made them as written except I didn't use the walnuts or raisins because I wanted the pumpkin to shine through and it did! I also decreased the sugar slightly by only using 1/4 cup of the SPLENDA® white sugar blend. But I used the full amount of the SPLENDA® brown sugar blend. I added 1/2 tsp. allspice and I'm glad I did because it was perfect in this! A very good cookie that tastes great warm or cold.

Homemade Tamales!

I have always wanted to make my own tamales at home, but I didn't know where to begin! There are certain ingredients that are not easy to find in my area such as
assorted dried chili peppers and dried corn husks! Then one day I got a message saying I had a new follower on Twitter called Global Grub. As soon as I saw what that page was about I was intrigued! They make cooking kits for some really cool recipes like Jerk Chicken with Coconut Rice and Beans, Tangine with Couscous, Sushi Rolls and Red Chili Tamales.

I love snacking on food that not only tastes good but is good for me too! It makes me feel good about what I'm eating while it cures my need to munch! Sometimes my snack ends up being a quick meal when I'm in a hurry...like for breakfast!

Having an easy homemade trail mix is so much better than store bought because it's made with only the things I want! Some store bought trial mixes contain items that don't appeal to me and that aren't really healthy like pretzels, or salty peanuts! And for some reason store bought trial mixes usually have stale, hard, raisins in them...not appealing at all!

I'm so thrilled at how delicious this potato side dish turned out! Besides the huge flavors...this was so easy and quick to make! I'm loving 'One Pot Wonders' these days because it's been a busy month so far...not much time for fancy cooking or difficult recipes! Everything is mixed together in one casserole dish, then you just pop it in the oven! Stir one time during baking...add the sauce and cheese...stir and continue baking until cheese melts! Done baking in 35 minutes!

One Pot Mexican Chicken and Rice

This is a recipe I created for my assignment with the Allrecipes Allstar Program. This month one of our sponsors is Herdez. This sponsor generously sent all the Allstars this delicious package of their cooking sauces! Also included in the box was a microwave tortilla warmer! I can't wait to use that convenient kitchen gadget!


For this assignment we were asked to create a recipe using Herdez's new cooking sauces. I love Mexican food so this was such an easy task for me! I knew I wanted to make a hearty, stick to your ribs kind of meal! I think I achieved that in this 'one pot' recipe! My family loved my creation and I loved how easy it was to make! The chicken and rice cook together is the same pot! No need to pre-cook the rice! Less pots and pans to wash always makes me happy! I love to cook but I hate to do dishes! I'll be making a few more recipes using Herdez cooking sauces! The flavors are so fresh and bold, but not overly spicy!
 
One Pot Mexican Chicken and Rice
One Pot Mexican Chicken and Rice

        3 boneless skinless chicken breasts, thinly sliced into bite sized pieces
                   1 1/2 cups uncooked long grain white rice
                   2 large cloves garlic, minced
                   1 medium sized onion, chopped
                   2 Tbls. olive oil
                   1 Tbls. butter
                   1 tsp. kosher salt
                   1/4 tsp. black pepper
                   2 tsp. chili powder
                   2 tsp. ground cumin
                   12 oz. jar Herdez® Tomatillo Verde Cooking Sauce
                   14.5 oz. can low sodium chicken broth
                   2 cups shredded cheddar cheese
                   1/2 cup sour cream
                   1/4 cup fresh chopped parsley or cilantro
 
Directions
In a small bowl mix together salt, pepper, chili powder and cumin. Sprinkle this mixture over the sliced chicken breasts and toss to coat.
In a very large skillet, melt butter with olive oil over medium heat. Add seasoned chicken pieces along with minced garlic and chopped onion. Saute while stirring until chicken is fairly browned and onions are tender, about 5-10 minutes. Then reduce heat to medium/low.
Add the uncooked rice to the chicken mixture and stir well. Cook for about 1-2 minutes. Then add the Herdez cooking sauce and the chicken broth. Stir well again and bring to a simmer. Then reduce heat to low, cover skillet and let simmer for 20 minutes.
                   Then uncover and sprinkle with shredded cheddar cheese. Top with sour cream and parsley or cilantro before serving.
Serve warm.   Serves 4
