I just love this recipe for so many reasons! It's low fat, creamy, healthy, easy and my kids eat it because they don't realize that there is zucchini in it! This recipe is shredded zucchini in a creamy parmesan/basil sauce!

Apple and Feta Pan Fried Pizzas
Eating healthy is part of my assignment this month in the Allrecipes Allstar Brand Ambassador Program. The ambassadors were asked to choose recipes from the My Plate healthy eating recipe collection. That's exactly where I found this pizza recipe! There are so many other recipes to choose from but this one stood out to me because of the combination of ingredients! It sounded so unique and flavorful! And that's exactly what is was! Plus I never thought to pan fry pizza dough! I think I'll be doing that more often!

Tomato Mozzarella Toast!
I'm just totally loving simple and easy recipes lately! I'm finding that recipes don't need to have a long list of ingredients to be flavorful! As with this recipe from the 'Riches to Rags by Dori' blog.
This is my version of her recipe. I made this using white
toast sprinkled with shredded mozzarella cheese topped with chopped fresh basil, sliced plum tomatoes, minced fresh garlic and a pinch of salt. Then I put it in the toaster oven to melt the cheese and it was done. A very light but VERY flavorful fresh tasting open face sandwich!
I loved every last bite of this! Give it a try!

Portobella Burgers with Roasted Red Pepper Paste and Smoked Mozzarella
I found this recipe on GroupRecipes.com. This is a Rachel Ray recipe. I never had a portobella burger until I tried this one. How did I live without this delicious recipe for most of my life? I've made this recipe about 20 times since then.
