Fry-Tata Fritatta

Fry-Tata Fritata
 I love these kinds of cool recipes! It's a new spin on a classic Fritatta...which is basically a huge egg omelette. But this recipe takes it a step further by adding crinkle cut fries on top and letting it finish cooking in the oven. It was delicious...and fun to make and serve. Creating the starburst design on top with the fries was very therapeutic...maybe it's just me, but I enjoyed that step. Here's how I this is made...

This is the kind of recipe that keeps me hooked on recipes because it's such a gem! I love finding these simple tasty recipes! These cookies are perfect, quick, easy, delicious, healthy and guilt free! Not to mention that they are soft, bite sized little cuties...Only about an inch and a half in diameter! So fun to just pop into your mouth! Goes so well with a glass of cold milk or a cup of hot coffee/tea.

I love snacking on food that not only tastes good but is good for me too! It makes me feel good about what I'm eating while it cures my need to munch! Sometimes my snack ends up being a quick meal when I'm in a hurry...like for breakfast!

Having an easy homemade trail mix is so much better than store bought because it's made with only the things I want! Some store bought trial mixes contain items that don't appeal to me and that aren't really healthy like pretzels, or salty peanuts! And for some reason store bought trial mixes usually have stale, hard, raisins in them...not appealing at all!

This was a very interesting recipe from the title...to the preparation...to the taste and texture! I had some concerns about if this recipe would work because I've come across many Internet recipes these days, that just look good in photos and are very popular on certain websites, but are totally fake and could never work in the real world! They just look cute on 'Pin' boards, if you know what I mean! This recipe had its share of problems from start to finish but it did taste very good! So all was not lost!

I love French toast! I've had it stuffed with bananas ** see here** or blueberries **see here**... topped with different fruits, baked into a casserole, made into a bagel! You name it, I've tried it! So why not try a muffin version? I saw this recipe on Pinterest and knew it was destined to end up in my belly! And as soon as I snapped the above photo, that's where all 3 went!

If this is the kind of breakfast they serve in Germany then I would be a VERY happy tourist! This was so light and fluffy! It puffed up so high while it was baking! And it's made with such simple ingredients! Not too much butter or sugar either! This reminded me of a combination of a filled crepe and stuffed french toast!

Of course I couldn't leave well enough alone so I had to tweak it slightly! I used bananas instead of apples and I added 1 tbls. of sugar to the batter of each pancake! And I used 1% low fat milk. I ate one whole 9 inch pancake myself...and I wasn't even full!!! So I would say this recipe only feeds two people!

I'll be making this again this weekend...and I'll be experimenting with different fruits! Of course I'll try it with apple next time, but maybe also blueberries!

Ingredients
1 apple
2 Tablespoons butter
 
Batter
4 eggs
3/4 cup flour
3/4 cup milk
1/2 teaspoon salt
 
Topping
2 Tablespoons sugar
1/8 teaspoon cinnamon

I love fritters of all kinds! Sweet or savory!  I've tried onion fritters, corn fritters, and apple fritters, along with these banana rum fritters! Fruit fritters are even better when you pair them with ice cream! But adding rum just steps it up a notch! And don't worry, you can feed these to children because the alcohol burns off during the frying process.

Egg Boats

Egg Boats
This is a great way to make egg sandwiches for a crowd! All you have to do is carve out a wedge in each hero roll and mix the egg, cheese, bacon, green onion, light cream, salt and pepper together in a bowl. Then just pour equal amounts of the egg mixture into each boat (hero roll) and bake in the oven for 25 minutes. I've been making this often since finding this recipe! So easy and delicious!

Go Bold with Butter!

This month in the Allrecipes.com Allstar Brand Ambassador Program we're promoting the 'Go Bold with Butter'  campaign to support the Wisconsin Milk Marketing Board in partnership with America’s Dairy Farmers! Check out their page for delicious recipes! I tried their 'French Toast with Honey Butter' recipe and it was HEAVENLY!!! The best french toast I ever had! And I just wanted to eat the honey butter by the spoonful! The honey butter would also be yummy on so many other foods...I want to try it on baked sweet potatoes next time! This is a great recipe to serve if you want to impress your guests! It tastes very fancy, but it is so easy to make! Here's my photo of the finished dish...

 The recipe makes about 12-16 pieces, so cut the recipe down if you want to make less!
I ate 4 pieces...YUM!!!
 I've loved butter as far back as I can remember! As a child, (3-4 years old) I can remember chomping away on sticks of butter! I would always get about 2 mouthfuls before my Mom would notice and take it away! Around that same time I also remember rubbing butter on my nails to make them shiny...lol! I guess I had a butter fetish! These days I have to be more careful about my butter consumption...everything in moderation! But it's always butter for me...never margarine!

Unique Custard Filled Dutch Baby!

This is a unique Dutch Baby recipe because of the custard that forms in the center of this cake while it bakes! I found this recipe on 'The Recipe Diva' cooking website. Posted by a member named Sweet Potato. I compared it to other Dutch Babies recipes. This recipe is the only one I found that had a custard center! It was delicious! It's suppose to serve 4 but I almost ate the entire thing myself!

When I saw this idea I just had to give it a try!
 I just thought it was so cute! So I tried this today!
My teen daughter LOVED it! I guess I'm a cool Mom now! But that won't last long!

This is how it looks when the warm peeled egg is being molded into the heart shape! Only takes about 10 minutes! I covered the cardboard with plastic wrap to make sure the egg didn't stick to it!
