Fluffiest Pancakes Ever

These truly are the best pancakes I've ever had! I totally love super fluffy, tall pancakes and that is exactly what you get with this recipe!

You will never want to use premade, store bought, pancake mix ever again after you try these pancakes! You can even  customize the pancakes by adding fruit ,nuts or chocolate chips. Just sprinkle a little fruit, nuts or chips on top of the batter after you pour each pancake onto the hot skillet. Then let it cook and flip. When you flip the pancake you will see it rise nice a high! That's the fun part! Then after they're cooked stack them on a plate to keep them warm until ready to serve. I love to serve mine with some Saturday Morning Syrup and a pat of butter.

INGREDIENTS:
3 cups flour
5 tsp. baking powder
1 tsp. kosher salt
5 Tbls. white sugar
2 & 1/2 cups milk
4 Tbls. butter-melted but not hot
2 large eggs
2 tsp. pure vanilla extract
Fresh fruit, nuts or chocolate chip - optional - *See note

DIRECTIONS:
In a large bowl, sift the flour, baking powder, salt and sugar twice. Sifting twice is very important in making these pancakes super fluffy. Then make a well in the center of the sifted flour mixture. Pour in the milk, egg, melted butter and vanilla extract. Mix lightly by hand until almost smooth. A few lumps are okay.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour 1/4 cup of the batter onto the griddle for each pancake. *Note (optional) - sprinkle with about 2 tbls. fresh fruit, nuts or chocolate chips at this point. Cook until browned on bottom. Then flip and watch the pancakes rise. Allow to brown again. Remove from pan, stack and keep warm until ready to serve.

Makes about 20 pancakes.
