I love to take a classic meal and give it a slight twist! And since Mexican food is one of my favorites I decided to give plain old meatloaf some south of the border flair! I even topped it with a Mexican style gravy that I call Mexican Pink Sauce. You can make this recipe as spicy as you want by using a spicier style salsa and taco sauce. Serve this meatloaf with mashed potatoes and a salad and dinner is done!

Mexican Meatloaf with Mexican Pink Sauce serves 4-6 INGREDIENTS: 2 lbs. lean ground beef 1/2 cup finely crushed plain tortilla chips 1/2 cup plain bread crumbs 1/2 tsp. kosher salt 3/4 tsp. ground cumin 1 tbls. chili powder 2 large cloves garlic, minced 1/4 cup finely chopped onions 1 cup salsa - I used mild 2 tbls. taco sauce - I used mild 4 oz. can chopped green chilies DIRECTIONS: Preheat oven to 400 degrees F. In a large bowl mix together all above ingredients. Form into a loaf and place in a baking pan. Bake uncovered on center rack for about 45 minutes or until cooked through. While meatloaf is baking make the pink sauce. Mexican Pink Sauce INGREDIENTS: 1 can (8 oz.) tomato sauce 1 cup salsa - I used mild 1/2 cup Queso Blanco Dip (Mexican white cheese dip) 2 tbls. taco sauce - I used mild DIRECTIONS: Puree the pink sauce ingredients until smooth, then place in a microwave safe bowl and microwave until thoroughly heated.
