Banana Split Mini Bites!

Aren't these just the CUTEST little desserts you've ever seen?

Well take it from me...don't try these unless your making them for no more than 2 people! What a huge pain in the neck these were to make! Here is a list of problems...

Problem #1... Did you know that melted chocolate doesn't stick to the slimy cut end of a banana? Well I didn't know that either until I started dipping these! And then the chocolate is now unusable because it starts clumping together from banana slime that was left behind. So I basically was only able to make these 4 pieces!

Problem #2... You are suppose to carve out the inside of each banana piece with a melon baller, so that you can fill it with ice-cream! Really? I've never seen a melon baller small enough for this job! But even if I had a teeny tiny melon baller, it's very difficult to do without breaking the sides of the banana...as you can see in my pic above! Look at the banana on the right. You can see where a piece of the side on top came off. I just stuck it back on because I didn't want to only serve 3 Banana Split Mini Bites!


Problem #3... Filling the inside of the banana with ice cream! I guess I would need that teeny tiny melon baller for this job also! But since I didn't have one, I had to make a real mess trying to get a teeny tiny amount of ice cream into the banana pieces using a baby teaspoon and every one of the fingers on my right hand.


Problem #4... How the heck do you take a photo of whipped cream with a cherry on top? It melts INSTANTLY!!! I literally had 5 seconds to snap this pic before the cherries started sliding off!

    1. lol...yes, it was!!! And you are so correct...I think some people just want to put out cute looking recipes, at any cost, even if the recipe isn't practical!

  3. These are just incredible. Wonder if an apple corer would work? Is the chocolate soft, what about the "dipping" choc. that hardens? Tommy would sure love these, but not sure I even want to tell him about them, lol.

    1. The apple corer might work as long as it's a very small diameter. And as far as the dipping chocolate...do you mean the 'Chocolate Shell' dipping chocolate that Hershey's makes? That might work as long as you fill the banana with the ice cream and then freeze it, because the Hershey's chocolate shell won't harden unless it comes into contact with something frozen. But I like the way you think...very smart ideas! Thanks Lynn! =)

I plan on trying this... put bananas in freezer to get very cold and firm... put a spot of chocolate on waxed paper for each piece of banana, then put cold banana on the chocolate and return to freezer... when chocolate is set... dip the bananas in chocolate... As far as the center of the banana....... a swivel knife (potato peeler) will work I think.... These are so cute!

  5. I completely agree with this entire post! How on Earth did the original poster get those cherries to sit atop the whipped cream without them falling off or the whipped cream turning into a runny mess? I even tried cutting the cherry in half. Still nothing. This was a dessert nightmare and definitely not a good idea to make for your kid's class like I aspired to do!

  6. I would chill them before begining and turn them on their sides, using a knife or scoop create a hollow for the ice cream, freeze them, heat chocolate and put it a squeeze bottle, on wax paper make a landing and place the frozen banana then pipe chocolate on sides, soften the ice cream and place in a sandwich bag then clip tip and pipe it into the bananas, return to freeze, remove about 15 minutes befored serving and top with whip cream and cherry.

  7. Yes, I think freezing the banana slightly would work! But all the other stuff sounds like a WHOLE lot of work...lol! And I've since learned how to make stabilized whip cream! I don't think I'll ever attempt these again though! But thank you so much for the tips! =)
