Sweet n' Salty Topped Oatmeal Bread

This delicious and unique bread is a recipe that I tried from my food friend named Lori McLain. She submitted this recipe into a food contest a few years ago. It's a definite winner in my book!
This tasty little loaf is called 'Sweet-n-Salty Topped Oatmeal Bread'. Perfect with a cup of coffee or tea! I made it as written except I tripled the brown sugar in the topping!  I love the nutty flavor from the oats and the buttery, salty, crunchy topping! I will be making this often! Thank you Lori for this wonderful sweet bread recipe. 
Here is how I made it...

Sweet n' Salty Topped Oatmeal Bread

1 cup rolled oats - I used instant oatmeal
2 Tbls. sugar
1 Tbls. butter
1 tsp.  kosher salt
1 cup hot milk
1 pkg. active dry yeast
1/4 cup warm water
2 & 1/2 cups all purpose flour
Mix rolled oats, sugar, salt and butter together in a large bowl.
Pour hot milk over the ingredients and cool to lukewarm.
Soften the yeast in the warm water and add to the mixture in the large bowl.
Stir in the flour and knead until dough no longer sticks to your fingers.
Shape into a 12"x 5" loaf of bread.
Line a cookie sheet with parchment paper and place loaf on the sheet.
Make 3 diagonal slits about 1/8" thick on top of loaf.

3 Tbls. melted butter
2 Tbls. rolled oats
4 tsp. brown sugar

In a small bowl mix together topping ingredients.
Smear the topping mixture all over the top of the loaf.
Sprinkle with 1/2 tsp. kosher salt.
Let the loaf rise in a warm draft free place for 1 hour or until almost doubled in size.
Preheat oven to 375 degrees F.
Bake for 30-35 minutes or until golden.
Serves 4 - 6



  1. Oh man! I am so happy you tried this ! It is so easy, even I can make it..ha ha I sneek extra sugar in there too...I made one this morning with oatbran instead of oats ...and it came out fine...made it in a regular loaf pan just in case!
    Yours looks so much nicer than mine....I will have to call mine"rustic." Ha ha...thanks Lillian ! xxoo

  2. I think yours looked better than mine! I love the loaf pan idea because then it will be higher! I can't stop eating this! I just had my 3rd piece with a cup of coffee! =)
