As you can see I'm a pork chop fiend! So when I came across this next recipe called Pork Chops Italiano I just had to try it! And of course I tweaked it to suit my families taste. Plus I needed to increase the recipe to serve 5 people and have some leftover. These pork chops were so full of flavor. It reminded me of an Italian style pork stew. And with the addition of mozzarella and mashed potatoes this became a very hearty meal. I also think it's a very pretty looking meal, standing tall and smothered with all those yummy ingredients! Look at all those heavenly layers of juicy goodness! This is another pork chop recipe that I'm happy to add to my list!

Pork Chops Italiano INGREDIENTS: 1 tsp. olive oil 10 ozs. fresh sliced mushrooms 2 tbls, olive oil 8 boneless center cut pork chops kosher salt pepper 4 large cloves garlic, crushed 1 large onion, chopped 14.5 oz. can diced tomatoes, undrained 1/2 tsp. dried basil 1/2 tsp. dried oregano 1/2 tsp. kosher salt 1/4 tsp. pepper 1 large green bell pepper, seeded and sliced thinly 1 cup shredded mozzarella 8 cups prepared mashed potatoes, optional but recommended DIRECTIONS: Heat 1 tsp, olive oil in a very large skillet over medium heat. Add in the mushrooms with a pinch each of salt and pepper. Cook while stirring for about 5 minutes. Then remove from skillet and set aside. Heat the remaining 2 tbls. olive oil in the same skillet. Season the pork chops lightly with kosher salt and pepper. Add to the skillet and brown thoroughly for 7 minutes on each side. Then remove from skillet and set aside. Add the garlic and onions to the skillet. Saute for about 5 minutes or until the onions are soft. Now add in the tomatoes, basil, oregano, salt and pepper. Cook for about 2 minutes, then add the pork chops back to the skillet. Cover the skillet and lower heat to a simmer. Let simmer for about 30 minutes. Then add in the green peppers and cooked mushrooms. Cover and simmer for another 15 minutes. Serve warm on a bed of mashed potatoes (if desired, but highly recommended) with the peppers and mushrooms on top of the pork. Pour the pan sauce over the top and add shredded mozzarella.
