Cheeseburger Soup

I mentioned in this post...'Philly Cheese Steak Sloppy Joe's' dilemma with that particular recipe! Well I decided to use the leftovers from the Sloppy Joe's to make this next recipe called 'Cheeseburger Soup'.

Cheeseburger Soup

I've seen lots of Cheeseburger Soup recipes on the Internet and the ingredients looked very close to what was in the Philly Cheese Steak Sloppy Joe's. All I needed to do was thin out the Sloppy Joe meat mixture with some beef broth, cook it with 2 cubed potatoes to thicken the broth and add diced celery for more soup flavor. Then I added in the leftover cheese sauce from the Sloppy Joe's and it was done! I served it with homemade garlic toast floating on top. It went over VERY well with my hubby and daughters! The garlic toast softened slightly and gave the soup the bread element it needed to be considered a cheeseburger. I think I'll make this soup more often!
