Acorn Bites

I love this healthy, no bake, recipe! I made it last year for Thanksgiving and everyone loved them! I even made them many times AFTER Thanksgiving because they're such an addicting snack! I found the original recipe on the Internet and tweaked it slightly.

These cute little acorns are full of healthy ingredients like bran cereal, pumpkin puree, honey, coconut, oatmeal, cinnamon powder, toasted sesame seeds and semi sweet chocolate chips. And they are just so easy to make!

INGREDIENTS:
1 cup Kellogg's All Bran Cereal
1/3 cup plain pumpkin puree
1/3 cup honey
2/3 cup shredded sweetened coconut
1/2 tsp. pure vanilla extract
1 1/3 cup instant oatmeal
1/2 tsp. cinnamon powder
1/2 cup semi sweet chocolate chips
1/4 cup sesame seeds - toasted


DIRECTIONS:
In a medium size bowl, stir together the first 7 ingredients.           
Then chill the dough for about 15 minutes. While the dough is chilling start melting the chocolate.
Line a cookie sheet with waxed paper.
Remove chilled dough from fridge and form into about 20-24 one inch oblong shaped balls.
Dip one end of the shaped dough into the melted chocolate then dip into the toasted sesame seeds. Place a piece of the All-Bran cereal into the top to form a stem. Do this for all the dough balls. Then chill until ready to serve.
