Eggs in Heaven

This is a recipe I created while trying to find new ways to prepare eggs! In my house we like to have breakfast for dinner once a week. It's fast, cheap and everyone likes eggs, so there's no whining!

I've seen recipes on the Internet called 'Eggs in Purgatory' which is a sunny side down egg, served ontop of a potato pancake or hashbrowns and then  on top of a bed of tomato sauce with a sprinkling of grated parmesan cheese.

That didn't appeal to me and I know my kids would never eat it, so I created 'Eggs in Heaven'. This consists of a sunny side down egg served on top of a potato pancake (or hash browns) sprinkled with white cheddar cheese on a bed of creamy cheddar cheese sauce. Everything tastes heavenly when creamy cheese sauce is involved! My family loved it! And if you're using store bought hash browns and cheese sauce, this can be ready in only a few minutes! Serve with a side of toast and you have a hearty, filling meal!

INGREDIENTS:
4 large potato pancakes or hashbrowns - about 4 inches in diameter ea.
1/2 cup shredded white cheddar cheese
1 cup of your favorite creamy cheese sauce
4 large fried eggs - sunny side down

DIRECTIONS:
Place 1/4 cup of the warm creamy cheese sauce in the center of a plate.
 
Place the warm potato pancake ontop. Sprinkle with 1/4 of the shredded cheddar cheese.
 
Now place the fried egg ontop of the shredded cheddar. Serve warm.

  3. Yum!!! We have an extremely busy afternoon after work tomorrow, think back to school supplies and eyebrows at the salon for me and the girls...
    This will be PERFECT when we get home!!! We love, love, love, breakfast for dinner!!!

    I made your eggs in paradise tonight. The family loves you too!!
    The only difference I did was to make a homemade Hollandaise sauce instead of the creamy cheesy sauce. I also fried up some frozen homefries as well. I served this beauty with bacon and toast. The family was in heaven and I was a very happy camper with dinner done in under 40 minutes!!!

    Thank you again honey for an amazing recipe and idea... this will surely be on our dinner table for years to come!!!

  6. I usually make my own cheese sauce, but I was wondering what good premade cheese sauces are out there.

    1. Hi Melissa! I always make my own also! But for this recipe you can use any jarred cheese sauce that you would find in the pasta sauce isle or even a jar of cheddar cheese dip from the potato chip isle. Here is a link with some great brands...

  7. Instead of cheese sauce, I think I would substitute palenta, or maybe cheese Grits. Sounds really good.
