Homemade Lo Mein! It's So Easy!

This recipe tastes JUST like the Lo Mein I get from my favorite Chinese restaurant...but better, because I can add only the vegetables we like! In my photo I show this recipe plain, with just some chopped chives on top, but I have made it many times since then and have added chicken, bean sprouts, yellow and green onion and sometimes water chestnuts! It all depends on who I'm making it for and what they like! I make this recipe often, especially when I'm craving Chinese food! Go ahead and try it...I know you'll love it!
The original recipe is from a cooking site, posted by a member known as Yomomma. I tweaked it slightly to suit my family's tastes! I'm posting the recipe with the changes I made!
Homemade Lo Mein
Lo Mein


INGREDIENTS;
1 lb. thin spaghetti
3 Tbls. olive oil
3 tsp. pure sesame oil-must be 'pure'
3 lg. cloves garlic-minced
1/4 tsp. cayenne pepper(we like it mild)
1/2 cup light soy sauce-must be 'light'
2 tsp. heaping tsp. creamy peanut butter
1 large onion-chopped
2 stalks celery-chopped
1/2 cup chopped green onions-to garnish

TOPPINGS; (Optional) Or Use What You Like;
1 lb. boneless skinless chicken cutlets-chopped bite size
or
1 lb. small shrimp
1 small can bean sprouts-drained, rinsed
1 small can sliced water chestnuts-drained, rinsed

DIRECTIONS;
Cook spaghetti according to package. Drain and set aside.
Heat both oils in a large skillet on med/high.
Add garlic, veggies and any toppings from the list and saute until cooked through.
Add cayenne pepper, soy sauce and peanut butter, simmer on low for a few minutes.
Pour this mixture over pasta and toss, top with green onions.
Serve warm. Serves 4.
