Perfect Hawaiian Chicken

The first time I ever tried Hawaiian Chicken was at a catered party many, many years ago. It was love at first bite! Since then I was on a journey to find that same delicious meal in restaurants. I would order Hawaiian Chicken whenever I saw it on the menu...but most times I ended up disappointed. The meal was either too sour or too tangy or too sweet. I finally stopped wasting my money on bad Hawaiian Chicken.
 Then one day I found an Hawaiian Pork recipe posted on a cooking website. It was posted by a home cook known as SDay5, whose numerous recipes I've tried and loved over the years! I had no doubt her recipe would be perfect! All I did was sub chicken for the pork and I added some red bell peppers. I was amazed at how quick and easy this was to make! It was done in less than an hour!

This recipe has just the right balance of tangy, sour and sweet! I served it with some cooked jasmine rice and it brought me back to that very first time I fell in love with Hawaiian Chicken! If you love really good Hawaiian Chicken or Pork, give this recipe a try!

INGREDIENTS:
4 large chicken cutlets - cut into bite sized pieces
2 large eggs
1/4 cup flour
1/2 cup corn oil
1/2 cup green peppers - chopped
1/2 cup red peppers - chopped
4 stalks celery - chopped
1/2 cup pineapple juice
1/2 cup pineapple chunks - canned
1/4 cup chicken broth

 
SWEET AND SOUR SAUCE INGREDIENTS:
3 Tbls. cornstarch
1/2 cup red wine vinegar
1/2 cup sugar
3 tsp. soy sauce
1/2 cup chicken broth
1 tsp. kosher salt
1/4 tsp. pepper

 
DIRECTIONS:
1. Beat together eggs and flour. Then dip chicken into this batter.

2. Heat oil in skillet and fry chicken slowly. After all chicken pieces have been cooked, drain chicken onto paper towels and remove excess oil from pan.

3. Add the peppers, celery and pineapple chunks to the pan. Then put the fried chicken pieces on top. Do not stir. Pour the pineapple juice and the 1/4 cup of broth, over this. Cover and simmer for 10-15 minutes.

4. In a seperate small sauce pan, combine all 'Sweet and Sour Sauce Ingredients'. Cook until thick. Pour over the cooked chicken and vegetables just before serving.

5. Serve with cooked rice. Serves 4
