Wonton Soup INGREDIENTS: 12 frozen pork pot stickers 2 green onions, chopped 1 small bok choy, chopped 3 large cloves garlic, minced 2 cans (14 oz. ea. ) chicken broth 1 Tbls. pure sesame oil DIRECTIONS: Add chopped green onions and garlic to canned broth, cooking until flavorful. Toss in chopped bok choy and pork pot stickers. Simmer about 10 minutes. Finish with a drizzle of pure sesame oil. Serves 4 |

White Bean Garlic Soup INGREDIENTS: 5 large cloves garlic, minced 2 Tbls. olive oil 14 oz. can diced tomatoes 14 oz. can white beans 1/2 tsp. dried thyme 4 oz. tomato paste 2 cans (14 oz ea. ) chicken broth 1/2 cup uncooked small pasta grated parmesan cheese DIRECTIONS: Sauté garlic in olive oil. Add diced tomatoes, white beans, thyme, tomato paste, uncooked small pasta and canned broth. Cook until pasta is tender. Serve with grated parmesan cheese. Serves 4-6 |

Ravioli Soup INGREDIENTS: 1 (13 oz.) package cheese ravioli
2 large garlic cloves, minced
1 green onions, chopped
2 cans (14 oz. ea.) vegetable broth
1/4 cup flat leaf parsley, chopped
1/4 cup fresh grated parmesan cheese
DIRECTIONS:
Heat broth with the garlic, green onion and parsley.
Let simmer for about 5 minutes.
Add the ravioli and simmer about 10 minutes.
Serve warm with fresh grated parmesan cheese.
Serves 4

Italian Wedding Soup INGREDIENTS: 1 small head escarole, chopped 2 cans (14 oz. ea. ) chicken broth 3/4 cup water 25 cooked mini meatballs 1/2 cup small uncooked pasta grated parmesan cheese DIRECTIONS: Add the cooked mini meatballs to broth along with chopped escarole, small uncooked pasta, and a healthy amount of parmesan cheese. Simmer until pasta is cooked. Serves 4 |

ReplyDeleteHi Nora! Thank you...yes, lots of snow and frigid temps for us too! I made the Wedding Soup last night and I plan on making the Won Ton soup in the next few days. Its not going to warm up anytime soon. Good thing I have LOTS of soup recipes...lol!
