Honey Lemon Glazed Oven Roasted Chicken

Your mouth should be watering just from reading the title! This recipe was so delicious in so many ways! Not only did I savor ever bite of the chicken, but the onions were pretty amazing too! Tender and sweet from basting in the glaze. Just add some potatoes or a green veggie and dinner is done with just a few ingredients!

This recipe was given to me by my foodie friend and fellow food blogger Judith from The Midnight Baker. She got the recipe from her friend Tara McConnell. It was Tara's mother's recipe. Honey Lemon Oven Roasted Chicken

INGREDIENTS:
10 boneless skinless chicken thighs
1 large onion - thinly sliced
3/4 cup dry white wine (not cooking wine)
1 1/2 tsp. kosher salt
1/2 tsp. black pepper

GLAZE:
1/2 cup honey
juice and zest of 1/2 lemon

DIRECTIONS:
Preheat oven to 375 F.
Season the chicken thighs with the salt and pepper.
Place the onions and wine in a large baking pan.
Put the seasoned chicken thighs on top of the onions.
In a small bowl whisk together the glaze ingredients.
Brush some of the glaze over the chicken thighs and place on middle rack in oven to bake uncovered for 1 hour.
 Brush with more glaze every 20 minutes.
After 1 hour of baking and glazing, place
 the chicken under the broiler for about 4 minutes to brown.
Serve warm with the onions and a green veg or mashed potatoes.
Serves 4-5 people
