Fluffiest Pancakes Ever
INGREDIENTS:
3 cups flour
5 tsp. baking powder
1 tsp. kosher salt
5 Tbls. white sugar
2 & 1/2 cups milk
4 Tbls. butter-melted but not hot
2 large eggs
2 tsp. pure vanilla extract
Fresh fruit, nuts or chocolate chip - optional - *See note
DIRECTIONS:
In a large bowl, sift the flour, baking powder, salt and sugar twice. Sifting twice is very important in making these pancakes super fluffy. Then make a well in the center of the sifted flour mixture. Pour in the milk, egg, melted butter and vanilla extract. Mix lightly by hand until almost smooth. A few lumps are okay.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour 1/4 cup of the batter onto the griddle for each pancake. *Note (optional) - sprinkle with about 2 tbls. fresh fruit, nuts or chocolate chips at this point. Cook until browned on bottom. Then flip and watch the pancakes rise. Allow to brown again. Remove from pan, stack and keep warm until ready to serve.
Makes about 20 pancakes.
