I was so interested in this recipe because it just seemed too good to be true! I was shown this recipe by my Facebook friend, Chip Stanley, when he posted on my wall!
The original recipe didn't work as well as I thought, so I tweaked it slightly with great results! The recipe says to put frozen fruit on the bottom of a baking dish and sprinkle boxed cake mix and diet lemon/lime soda on top. Then bake! Well, you really need to stir the cake mix with the soda in a separate bowl first, then pour it on top of the frozen fruit
because if you don't, the cake mix stays powdery on top of the finished cobbler!
My sister tried this recipe and used berry flavored seltzer instead of lemon/lime soda! She said it was so much better with the seltzer because it wasn't overly sweet! So on my second try I did the same thing and I agree...it was just sweet enough!
So with these minor adjustments this is a VERY good and VERY easy cobbler! I will always keep these 3 ingredients in my house in case unexpected guests drop by...or in case I get a cobbler craving!
3 Ingredient Cobbler INGREDIENTS: 20-24 ozs.. frozen fruit of your choice - I used blueberries. Do not thaw! 1 boxed white cake mix - do not prepare the cake mix. Just use it as is. 12 ozs. seltzer (carbonated water) - I used berry flavored, but use what you like, even plain. DIRECTIONS: Preheat oven to 350 degrees. Place frozen fruit (do not thaw) evenly in the bottom of a 9x13 baking pan. In a medium sized bowl, lightly mix together the powdered cake mix and seltzer. Pour over the frozen fruit and bake uncovered on center rack for about 55-60 minutes or until golden brown. Serve warm. Goes great with a scoop of ice cream on top. DeleteI tried that, but it didn't work at all! The cake mix stayed powdery on top of the cobbler. I was hoping it would be a like a crumble or a crisp. But try it that way and let me know what you think! =)
DeleteA true cobbler is made from a pie crust, not a cake mix. I'm not saying this won't be good, but it should be called something else, not cobbler.
DeleteI've never made a cobbler with a pie crust before! All the cobblers I've ever seen and made, have a crumb cake type of topping or a soft cake like topping. And if it's a very firm, dry, crumble it's usually called a 'Crisp' instead of a 'Cobbler' =)
DeleteWhoa I am so late seeing this! The cobblers that I used to know as a child all had a flaky - pie like crust. It was 'cobbled' together, nothing fancy...just pressed in place, fruit was added and then a top was put on. I remember the top had extra sugar added to make it glisten and it did not necessarily go to the edge.

DeleteI would melt a stick of butter to pour over the top if just using the "dump" method. That way the top does come together in a more of a crumble way. I will try using the seltzer next time I make my version of this, which is 1 cup sugar, 1 cup flour, 1 cup milk, 1 tsp vanilla, mix together. Melt 1 stick butter in 9x13 casserole, dump in either fresh fruit or pie filling fruit (2 cans), then pour sugar/flour/milk/vanilla mixture on top. Do not stir. Bake at 350 for 35-45 minutes. I love your version and will try it very soon!

DeleteCanned fruit and a dry cake mix are normally called a "dump cake" because you literally dump it all in the pan...no seltzer or any other liquid other then what is in the fruit. I've been making dump cakes for years but I will be trying this version with the seltzer soon!

DeleteMy recipe that is sort of similar to this: Put two cans of pie filling on the bottom of a 9 x 13 pan. Spread a dry cake mix over it, then thinly slice two sticks of butter and arrange evenly over the top. Bake until browned and all cake mix is moist, about 45 minutes at 350. My favorite is peach pie filling and spice cake mix.
DeleteI have made this before and agree that you need to mix the powder and liquid together first or you get dry clumps. Also, do not make this in an aluminum pan as the acid in the berries will pit the metal. I haven't tried it in non-stick, but would recommend going with glass!

ReplyDeleteThe frozen fruit shouldn't have any liquid because it's frozen...lol! The frozen fruit I used was in a plastic bag and the frozen fruit was able to be dumped into the baking pan and spread out. This cobbler is baked while the fruit is frozen. I hope you'll try it! =)
DeleteWhen the frozen fruit thaws, it does cause liquid because of it being froze. If you leave frozen fruit out in a small bowl when it thaws there will be juice/water in the bottom of the bowl. At least that I have used does. I have even froze my own fruit and it comes out the same way when thawed.
DeleteYes, that's true, but with this recipe you do not thaw the fruit. It gets baked while the fruit is still frozen. That's the beauty of this recipe! But I think I'll edit to recipe to emphasize using the fruit while it's still frozen. Thanks! =D

DeleteI used a can of blueberries and had some canned pineapple rings ( six of them) that I placed on top of the blueberries, and it turned out great!! I used white cake mix, and used orange crush for the pop. The flavor combination was amazing!! Baked it for 55 minutes. After the first 20 minutes at 350, I turned the oven down to 325 for the remaining 35 minutes. Thanks for sharing this recipe, my fiance is a sweet lover!! I will definitely make this again and experiment with different flavors. :)

DeleteI have made this without the seltzer and used cannd apple or Cherry pie filling, cakemix and a stick of melted butter!! It is of course very rich and so the seltzer would probably be as good and not as many calories!!! sounds good!!

DeleteAnyone that has a Soda Stream can make their own seltzer water at home with plain tap water. That way you do not have to buy & store bottles of seltzer!

I tried this and it was good, but I was wondering if it can be made with just a pre-made pie crust for the topping? I like the idea of not adding any additional sweets/fats to the filling, but in my house we like the taste of the crispy pie crust topped cobbler. What do you think? Can I just put a pie crust on top of frozen berries and get a good result?

DeleteIf your just looking for something different try pre-made crescent rolls pinch them together till you can make a thin layer on a cookie sheet. Then put blueberry topping spread thin then mix 1 8oz block of cream cheese with 1/2 cup of powdered sugar and layer that on top of the blueberries then top with the remaining crescent rolls. Should only use 1 can of 8 crescent rolls. Bottom layer will go from side to side of the pan and I cut the top in strips and made a lattice pie like top. Turns out great but can't sit long or the bottom crust turns soggy. :) just an idea!

DeleteI have made this for years! It is a camping favorite. We do it in a cast iron dutch oven over charcoal or coals. We use can of any pie filling on bottom, cake mix,can of 7-up and sprinkle brown sugar on top!!

ReplyDeleteWhen I made this the first time. I melted a stick of butter and pour it all over the dry cake mix. Later on I made it with the dry cake mix and used a 12 oz. diet seven-up. L like it any way you fix it. I got the recipe from Weight watcher friend and was 4 points plus for one serving.

I used frozen blackberries and lemon-lime selzer water. baked it for approximately 60 minutes in a convection oven. I wasn't sure what the topping was to look like. I assumed it would be like a sponge type cake, Instead it was like a pie crust top.

DeleteI JUST made this recipe with spice cake and apple pie filling. IT IS DELICIOUS!!! I used 2 cans of pie filling (total 42 or so oz, one can barely covered the bottom of the 9x13 pan) and for the liquid mix I used 3/4 cup plain carbonated mineral water and 3/4 cup 7up (equals 1.5 cups or 12 oz) I baked it in a glass pan on 350 for about 45 minutes- I checked it at 35-40 and the cake was still slightly under-cooked. My daughter picked out cherry filling and confetti cake mix with 7 up, can't wait to make that next! THANK YOU so much for this super easy recipe! I will be making this year'round!!!!

DeleteMy 17-year-old son just made the blueberry version. The dessert tastes nice and light, like a healthy snack. I don't feel guilty for eating it even if it may not be as healthy as I need it to be. Glad we tried it. Now we won't mind experimenting.

DeleteI made this tonight, it was very good. Better then I thought it would turn out. I used Saskatoon berries and rhubarb with lemon lime spritzer, Next time I'm going to add something like granola for a bit more crunch. Thanks so much for this recipe. Debbie

DeleteThis recipe sound's so absolutely YUMMY and it's EASY too, what more could you ask for! I was thinking about maybe using Pear's or Pineapple with white cake mix and 7-up. These are favorite's of my family and will make a nice surprise one night. Thank's for a great time saver!!!!

DeleteI made this using caramel cake mix, apple pie filling, and diet Mt. Dew. I didn't mix the cake mix & soda but made sure to slowly pour it all over so it wet all the cake mix. There were still a few cake mix crumbs after baking so I just mixed it in with the apples after I spooned a serving in my bowl.

ReplyDeleteI made this and was amazed at the simplicity. With that being the case, why are we still instructed on the boxes of mixes to use the eggs, grease the pan, etc.?
I have purchased more mixes for experiments. I was expecting more of a 'cobbler' product, but this grew on me as it is a cake, and perhaps more juiciness of a cobbler would result in a gummy cake. Don't know enough to know...

DeleteSpice cake is what I purchased. Figured to fry some apples, add the cranberries to the apples,add some lemon juice (soak the cranberries in this to soften them) and a bit of brandy; then sprinkle pecans on the top of the cake, along with some cinnamon sugar.

DeleteHow about cooking it in the microwave???? I do not have a working oven and it is too hot here to use it anyway. Canned peaches and spice cake mix with pop.
ReplyDeleteThat sounds like a delicious combination but I'm not familiar with making cakes in the microwave! I've only made mug cakes....which worked out fine! As long as you know a cooking time, it should work! Please let me know how it works out for you and how long you cooked it! Thanks! =D
DeleteI've made this with a gluten free cake mix and it turned out wonderful. You just have to make sure the ounces are about the same as a regular cake mix or use 2 GF mixes.

ReplyDeleteI've never tried a brownie mix but it should work also. It just won't have the density of a brownie. It will be more like a chocolate cake consistency. Please let me know if you try it. Thank you! =D

DeleteIt came out Awesome! I used organic apple pie filling....the cinnamon sugar on top really added a nice added cinnamon crunch! The whole family loved it. I also found in the frozen fruit section, a bag of apples and cranberries ...thinking about using a pumpkin cake mix with that combo for a great fall crumble!

DeleteGreat ideas ! I have 2 4-pd bags of blueberries in the freezer from my local food pantry...was wondering what to do with them all ! Also have a 2 pd bag of dried cranberries to use; and tons of fresh apples. Maybe soaking the dried crans, with some warm brandy first...and an apple cake on top ? I think the cinnamon/sugar mix goes great on just about every flavor combo ! As far as the cobblers made with pie crust---( which is what I was raised on !) ...I think cobblers made that way is a "southern" thing. ;-) Only we added cold heavy cream to a warm Blackberry or Peach cobbler when it hit the bowl ! Delish !!! ( back in the days before we all knew what cholesterol was... )

DeleteI don't mix them in a separate bowl, I just run a knife thru the top three or four times and it works.
ReplyDeleteI tried not mixing the cake mix and seltzer in separate bowl but it didn't work for me. If even a crumb of the cake mix was dry, it stayed that way, even when fully cooked.
