Mexican Pork Chops
INGREDIENTS:
4 boneless center cut pork chops
1 tbsp dark brown sugar
2 tsp chili powder
1 tsp cumin
salt and pepper to season the pork chops
2 tbsp extra virgin olive oil
DIRECTIONS:
Lightly season both sides of the pork chops with salt and pepper.
On a flat plate mix together the brown sugar, chili powder and cumin.
Dip both sides of pork chops in this mixture.
Heat olive oil in a large oven safe skillet on medium heat.
Thoroughly brown the pork chops on both sides.
Then finish cooking in the oven at 350 degrees F until cooked through, about 20 minutes.
Serve warm.
This recipe can easily be doubled.

DeleteMade this tonight....delicious and I poured the pan juices over the chops which gave them a little more sweetness.

DeleteHave u ever tried doing this with bone in chops? That is all I have on hand right now.
ReplyDeleteI never tried it with bone-in, but that would be even better for more flavor. I just don't like paying for the bone, so I use boneless as much as possible. Sometimes you need the bone for more flavor and moistness. But this recipe is so flavorful that it even works with boneless. I hope you'll try it and let me know how you liked it! Thanks! =D
